Olive and Pistachio Crusted Salmon

INGREDIENTS:
2 salmon fillets
1/4 cup green olives, pitted and finely chopped
1/4 cup pistachios, shelled and chopped
2 tbsp breadcrumbs (preferably panko for extra crunch)
1 tbsp olive oil
1 tbsp lemon juice
1/2 tsp garlic powder
Salt and pepper to taste
Fresh dill (for garnish, optional)

METHODS:
Prep the Crust: 
In a bowl, mix the chopped green olives, pistachios, breadcrumbs, garlic powder, and a pinch of salt and pepper. Set aside.
Season the Salmon: Pat the salmon fillets dry with paper towels. Drizzle with olive oil and lemon juice, then season with salt and pepper.
Crust the Salmon: Press the olive and pistachio mixture onto the top of each salmon fillet, coating them evenly.
Cook the Salmon: Heat a non-stick skillet over medium-high heat. Place the salmon fillets in the skillet, crust-side down, and cook for 4-5 minutes. Flip the fillets and cook for another 4-5 minutes, or until the salmon is cooked through and the crust is golden brown.
Serve: Garnish with fresh dill and serve with a side of roasted vegetables or a simple salad.
